Today's Loaf

I started with the standard - in order to make 1kg

500 g of sourdough starter - which is a poolish of 50/50 water / flour -- so assume 500g of starter has 250 g flour and 250g water

Therefore -- 1k = 250g (poolish)  + 750g added flour

70% hydration -- 700g w minus 250 = 450 g added water

25 g salt

20 g yeast

Mix the ingredients in mixer, and spin until it clings to the paddle.  Into a bowl and into the sink with an inch of warm water and cover the sink - let rise for about an hour -- but not too too much -- this is the first trick: leave some rise for the bread

Next - gently pour out onto floured pan -- and with floured paddle, shape into loaves.  NEXT trick is to make sure not to make loaves too large -- too large and you won't get the rise - AND the higher volume will force longer cook times.

Let them rise for maybe 20-40 minutes, maybe more -- until they start looking bulbous.  The trick here is to hit the apex of the rise -- when the yeast starts quitting, then you've hit the top -- very hard to estimate.

I split 1kg into about 8 loaves.

Lastly -- preheat oven to 450 - with 1/4" steel plate  - pour water into a pan in the oven and let cook.   About 30 minutes.  Heat oven to 450 and then down to 400.  I like sourdough slightly undercooked to preserve the sourdough smell, but whateer you like.

Another trick: do NOT remove bread from oven -- let it cool IN oven -- then the outgassing from the inside won't make the crust soggy.

2) steam - think dry sauna vs wet -- wet sauna is MUCH hotter to the skin -- transfers more heat.

3) consider just spraying the loaves
